VINIFICATION
Parcels of old vines are selected. Hand-picked grapes sorted in the vineyard and cellar. Whole bunch pressing, inerting of the harvest, indigenous yeast. Low-temperature fermentation in barrels and stirring of the barrels on fine lees. Aged in new oak and one-wine barrels (8 to 10 months). Final blending after aging. Bottling in one batch, and ageing from 4 to 12 months. Organic and Demeter cuvée.
TASTING NOTES
Golden and honeyed colour. Rich and complex nose, hints of toast, and notes of fresh citrus and white fruits. Lovely volume on the palate, freshness, balance, and very persistent length, with a slight salinity on the finish. Ageing in new oak brings volume and fullness on the palate, roundness while retaining the wine’s freshness.
