VINIFICATION
Plot selection of old vines, the highest in altitude. Hand-picked grapes are sorted in the vineyard and cellar. The grapes are whole-cluster pressed. Indigenous yeast, low-temperature fermentation. Vinification and partial maturation in stainless steel tanks on fine lees. Organic Cuvée and certified Demeter.
TASTING NOTES
Pale peach colour. Expressive nose with stone fruit aromas (peach, apricot) accompanied by iodine and aniseed notes. Balance, volume and good length in the mouth. A fresh and persistent finish that confirms the iodine and aniseed notes felt on the nose.
